In a wide bowl, whisk eggs, milk, cream, and spices with a fork.
Add 1 tbsp of butter to the hot pan, while it melts dip one slice of bread into the batter, fully coating both sides. Place bread in pan and cook, 2-3 minutes per side, until golden.
In a small pot or skillet, add blueberries, sugar, and1 tbsp water. Heat over medium-high heat, stirring occasionally, until berries are hot and about 1/2 have burst, about 4 minutes. Add spices and mix until combined.
Top french toast with blueberries and maple syrup.
