Banana bread gets a modern and cozy makeover with the addition of maple syrup and toasted walnuts. The sweet and crunchy update adds some healthy protein and makes you feel good about eating it for breakfast 3 days in a row.
I started to make my favorite banana muffin recipe, when I realized it was in need of a winter makeover. Sometimes it’s healthy to remix an old classic recipe, especially when the changes include pure maple syrup and toasted walnuts.
We picked up a giant mason jar of pure maple syrup during our summer vacation in Maine and it is SO GOOD. Naturally, I’m now sneaking it into as many recipes as possible. I also may occasionally dip a spoon in for a taste. Guilty.
The jar was on the shelf at the tiny diner on the side of a country road as we started our travels home. This place had the best fried pickles that I have craved many times since then (and I don’t usually like pickles!)
