Ingredients
- 3/4 c sugar
- 3 large mashed bananas (browned bananas taste best!)
- 3/4 c vegetable oil
- 2 eggs
- 2 c flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 5 tsp. maple syrup
- 1 1/2 c walnuts
Instructions
- Preheat oven to 350 degrees and grease a loaf pan.
- Place roughly chopped walnuts on a baking sheet and toast in preheated oven. Remove when fragrant and set aside to cool.
- Use a potato masher or large spoon to mash the bananas in a large mixing bowl, leaving some small chunks for texture.
- Add other wet ingredients (sugar, oil, eggs) to bananas and mix well.
- In a separate bowl (or directly on top of the wet ingredients) mix together the flour, baking soda, and salt.
- Mix together wet and dry ingredients, add 3 tsp maple syrup. Stir in half of the walnuts.
- In a small bowl, mix remaining walnuts with 2 tsp maple syrup. Fill loaf pan with batter and top with maple syrup walnuts.
- Bake 45-55 minutes.
