Maple Walnut Banana Bread

Ingredients

  • 3/4 c sugar
  • 3 large mashed bananas (browned bananas taste best!)
  • 3/4 c vegetable oil
  • 2 eggs
  • 2 c flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 5 tsp. maple syrup
  • 1 1/2 c walnuts

Instructions

  1. Preheat oven to 350 degrees and grease a loaf pan.
  2. Place roughly chopped walnuts on a baking sheet and toast in preheated oven. Remove when fragrant and set aside to cool.
  3. Use a potato masher or large spoon to mash the bananas in a large mixing bowl, leaving some small chunks for texture.
  4. Add other wet ingredients (sugar, oil, eggs) to bananas and mix well.
  5. In a separate bowl (or directly on top of the wet ingredients) mix together the flour, baking soda, and salt.
  6. Mix together wet and dry ingredients, add 3 tsp maple syrup. Stir in half of the walnuts.
  7. In a small bowl, mix remaining walnuts with 2 tsp maple syrup. Fill loaf pan with batter and top with maple syrup walnuts.
  8. Bake 45-55 minutes.
