Gooey S’mores Bars

Nothing compares to campfire s’mores. I’ll be the first to tell you that. Warm, gooey, and sweet. Eaten outside around a fire. But sometimes, that’s just not possible. I’m telling you, this is the next best thing. A go-to alternative for when you want the campfire feel but are missing the open flame.

I was craving s’mores (no surprise there) and it was a beautiful spring night. We went out and bought all the supplies for s’mores and prepared the fire pit. We grilled dinner, ate outside, and had a beautiful start to the evening. Then I went to try and start the fire and the wind immediately picked up. So much so that I could not get the fire to start, so time for plan B – these soft, gooey, chocolate-y s’mores bars.

Gooey S'mores BarsMy s’mores craving was fully satisfied, we had a dessert to bring to a party the next day, and I was able to snack on these tasty things for the next few days. A total win in my book.

It starts with a crunchy layer of graham cracker pieces. Then a thick cookie dough layer filled with mini marshmallows and chocolate chips. Then a extra chocolate and marshmallows on top to make it oh-so pretty.

Ingredients

  • 6 graham crackers
  • 1/4 c butter, melted
  • 1/2 c butter, softened
  • 1 1/2 c brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 c flour
  • 1/2 tsp. salt
  • 1 c chocolate chips
  • 1 1/4 c mini marshmallows
  • 1 1/2 Hershey's bars, broken into individual pieces

Instructions

  1. Preheat your oven to 325 degrees and grease a 9x9 pan.
  2. Crush graham crackers in a plastic bags or in a food processor. You should still have some dime-size pieces, but no larger.
  3. Add 1/4 cup of melted butter and mix together in a medium bowl. Add the entire mixture to the pan and press to make the bottom crust.
  4. In the bowl of a stand mixer, use the paddle attachment to cream together remaining softened butter and sugar. Beat until well combined and smooth, then add eggs one at a time and vanilla.
  5. Add flour and salt to bowl and mix just until combined. Mix in chocolate chips and 1 cup mini marshmallows.
  6. Add batter to pan on top of graham cracker crust. Top with remaining marshmallows and Hershey\'s bars.
  7. Bake 30 minutes and allow to fully cool before cutting.
