When Spring finally rolls around, I start to crave citrus. Lemons, limes, and especially oranges. These light and sweet orange scones have the perfect amount of zest to help you think of spring anytime of the year.
As a bonus, they’re mixed entirely in the food processor. That means no labor-intensive cutting of the butter, and less dishes to wash. A win-win!
The key to fluffy scones is to not overmix the batter, so mix only as much as necessary, while leaving some small pockets of butter throughout the dough.
I made these tasty bites for Easter brunch, so I made them small and perfect for snacking. The glaze hardens so you can easily throw them in a bag for an on-the-go treat (which we did for our drive.)
If you were wondering, the scones are absolutely delicious with mimosas.
